Samphire, also known as sea asparagus, is a native succulent with a woody base and branching structure.

It thrives in the salty flats of South Australia and is best used in the summer months when its fleshy leaves are bright green and aromatic.

Although it can still be found in the winter with a reddish/pink color. Blanched winter samphire has a delicious salty taste, providing a crunchy texture and a burst of fresh flavor similar to asparagus.

This versatile plant can be enjoyed raw or cooked, and pairs well with seafood.

However, be cautious as samphire is a protected plant with varying regulations in different states.

To reduce its natural saltiness, it can be blanched or soaked before using.

It is also a good source of vitamin A, calcium, and iron.
